Originally made by winemaker John Forrest as a surprise for his wife Brigid, this smooth, complete bubbly shows attractive evolution. Pithy grapefruit, oyster shell, toasty yeast and patisserie cream aromas have a hint of volatility, but they are very appetising, and the palate is generously flavoured yet tightly structured and fresh.
